This delicious and most beautifully presented dessert will captivate your audience!  This is the perfect addition to your table for the holidays, or any special occasion and so easy to make. And a big hit with ice cream lovers!

Crème de Cacao Ice Cream Cake

1 quart of chocolate chip ice cream, softened
1 package of Oreo© cookies
1 8 oz package of cream cheese, softened
1 14oz jar of Maraschino cherries
3 oz of Crème de Cacao liqueur
Crush the Oreo© cookies coarsely; reserve a cupful to use for garnish and line the remainder in the bottom of a 10” spring form pan
Remove the cherries from the jar, reserving the liquid and 10-12 cherries for garnish; chop the remaining cherries for the filling
Soften the ice cream and cream cheese in a large bowl; blend together with a hand mixer
Fold in the Crème de Cacao and the chopped cherries and small amount of the liquid for desired color
Transfer the mixture to the pan and place in freezer for about 10 minutes to set for garnish.
Remove the pan, sprinkle the cookies over the top of the cake and place cherries evenly around the top
Place back in freezer for several hours or overnight; remove from freezer and set out on counter for several minutes to remove the spring form easily.  Set in freezer again until ready to serve.  Allow to defrost slightly before cutting.
